Wang Zengqi wrote in the article "Tofu": "Toon mixed tofu is the best grade in mixed tofu. Tender toon head, buds and leaves are not comfortable, the color is purple and red, the smell of the fragrance is tangy, the boiling water is slightly hot, the stem leaves turn green, take out, knead with fine salt, wait for cold, cut into minced pieces, mix with tofu (south tofu is preferred), and the sesame oil is composed. The entrance of chopsticks, Sanchun does not forget. Wang Lao's description of the deliciousness of the toon really makes the mouth water.
Toon, as a seasonal fresh vegetable in spring, is enough to make the taste buds have a refreshing journey. Toon is different from common vegetables and vegetables in that it does not grow directly in the soil, but the new shoots of the toon tree. If you don't eat it while it's still a bud, it will grow into new branches and leaves. Folk proverb cloud: "Before the rain, the toon buds are tender and silky, and after the rain, the toon buds are woody", which means that the good situation of the toon is actually about half a month.
I remember when I was a child, my mother used a bamboo pole tied to a sickle to pull down the branches of the toon tree in order to pick the toon heads, and then picked its young shoots and leaves. She washes the toons and blanches them with boiling water to turn the buds from red to green. Take out the cold water and soak, filter out the water, then chop it, put it in the egg mixture, add an appropriate amount of salt, and stir quickly with chopsticks to make it evenly blend into the egg mixture. Put an appropriate amount of oil in an iron pot, pour in the toon egg mixture when the oil is hot, and turn quickly until the egg liquid is half solidified. Flip it over with a shovel, fry it until golden brown on both sides, put it on a plate, the unique aroma of toon scrambled eggs makes the tip of the tongue roll, fluffy and soft, delicious, and the tongue is full of relish, never get tired of eating. It is no wonder that after Kang Youwei tasted the scrambled eggs of toon, he happily wrote the poem "Song of Toon": "The mountain stalk is fat and has no flowers, and the leaves are delicate and tender with many buds." The king of Changchun is immortal, and the moon is fragrant and cheeky. "The strange aroma formed by the egg scrambled toon actually made him fragrant and lingered, and it did not disappear for a month.
The crispy fried toon fish has a golden brown and crispy skin, and the green and crispy buds of the toon fish are intoxicating. But the funny thing is that there is no fish in the toon fish. The production process is very simple, wash and drain the fresh toon buds and leaves, take a clean small basin, take an appropriate amount of flour, pour in the prepared egg liquid, put an appropriate amount of salt, add water to adjust the flour into a batter, stir evenly with chopsticks, and then put the toon into the stirred batter in batches, so that the toon is hung with slurry respectively. Then heat the oil in the pan, and after the oil is hot, put the toon leaves wrapped in the batter into the oil, and the batter makes a "swish" sound in the oil pan, which quickly expands and gradually turns to golden, like a small fish swimming around. The green of spring is half hidden in the crispy golden batter, pick one up, put it in the mouth and chew it slowly, "click, click", the toughness of the flour and the crispness of the toon stalk make people want to stop, it is really delicious to the tip of the tongue, but it is on the heart.
The history of Chinese eating toon has been thousands of years. As early as the Han Dynasty, the custom of eating chun has spread all over the north and south of the river, and it was more prosperous in the Tang and Song dynasties. Su Shi, a writer in the Northern Song Dynasty, wrote in the poem "Hazel Name": "It is as rich as winter vegetables in Shu, and frost leaves and dew buds are more prosperous." "The buds here are the toon buds.
"The spring rain is moist and fragrant, and the toon outside the hospital spits out the tender buds." Toon, from the distant time, contains all kinds of wonders in the plain and simple. It has soothed the poor years of the past, and has become an inrevocable memory in people's hearts in the time of abundance, bringing the comfort of nostalgia to countless wanderers.
