Hello sisters! Today we share the method of chopping dried pepper radish, which is my mother's recipe for 30 years, which is easy to learn and will not spoil when crispy. Chopped pepper and dried radish is a very popular Chinese cooking, especially in Hunan, Sichuan and other regions, where people are particularly fond of spicy food. The main ingredients of this dish are dried radish and chopped pepper, the production process is relatively simple, but the taste is very delicious, spicy but not dry, it is a good choice for rice, the following is a simple recipe for chopping dried pepper radish, let's start the culinary journey together.
Ingredients Required:Herbs, salt, chopped peppers
Method:Fresh radish is cleaned, no need to peel, the peel is not so crispy, the skin is the soul of dried radish.
Then remove the head and tail, cut into thick slices, do not cut the top of each piece, cut the bottom into small strips, hang them on a hanger for easy drying, and put them in a sunny place to dry.
The radish was dried for three days, dried seven or eight times, and it was fine to look like this.
Put them in a large basin, pour warm boiled water and soak them for half an hour before cleaning, there will inevitably be dust or dirt in the drying process.
Once cleaned, squeeze out the water and cut into small pieces and set aside in a large bowl.
Add a little edible salt, you don't need too much salt, because you have to add chopped pepper later, and there is already a salt flavor in the chopped pepper. There is no other skill in making dried radish, you have to knead it well. Knead it vigorously, knead it well, and knead it until it tastes salty. (If you just mix a few times with chopsticks, it is not delicious to make dried radish)
Knead until the color changes from white to yellowish, add a few tablespoons of chopped chili, this is my own garlic chopped chili, very delicious, very fragrant.
Then put on gloves, knead it evenly, put it in a sealed jar, press it tightly, put it in the refrigerator and let it ferment for two or three days before eating.
When you eat, take it out and mix it with some sesame oil, it is more fragrant, and the dried radish will not be bad for half a year, and it tastes crunchy and very good.
